Here's a foolproof method: Hold your hand five inches (no closer!) above the cooking grate, being careful not to touch the grate. When the fire is at a searing high heat, you won't be able to hold your hand there for more than two seconds. For a medium flame, the general rule is four or five seconds. And when the flame is medium-low, you'll be able to tolerate about seven seconds.
