What's the easiest way to peel garlic?
A garlic-peeling tube works brilliantly. Just place unpeeled cloves inside the tube, then roll back and forth. (Shown here: Omessi Garlic Peeler, $8, cooking.com; or try the Good Grips Garlic Peeler, $7, oxo.com.) Or, if you're planning to mince or press the garlic, just smash the clove first with the flat side of a large knife blade -- the skin will peel off easily. Finally, if you're peeling a lot of garlic at once (five or more cloves), put the separated cloves into a plastic container with a tight-fitting lid and shake. The friction will rub the skins off.
