But What If...

I forget to thaw the turkey in the fridge?
No problem. Submerge the turkey (fully wrapped) in a sink or tub of cold water, breast down, and thaw (you'll need about 30 minutes per pound). To defrost faster, take off the packaging, place the turkey in a large microwave-safe container and microwave it, uncovered, according to the manufacturer's instructions.

My gravy is lumpy?

Pour it into a food processor and process until smooth; return to saucepan to heat. (To avoid lumpy gravy in the first place, whisk constantly as you add flour gradually to the turkey drippings.)

I burn something or forget to prepare a dish altogether?
