Why do my chocolate chip cookies always turn out hard and crunchy?

You may be overbaking them. Keep your cookies in the oven for a few minutes less than the minimum time suggested in the recipe. The middles should still be quite soft, and the cookies will be
golden only around the edges. (They may look a little undercooked, but they’ll firm up as they cool.) Also, for the best cookie texture, use a shiny, light-colored baking sheet lined with parchment paper and place it on a rack in the upper third of your oven.
