Blow-Your-Mind Buffalo Burgers
This burger from Jo Hahn of Newport News, Va., a winner in Quick & Simple's Best BBQ Dish contest, substitutes leaner buffalo meat (you can stick with beef if you prefer)
DIRECTIONS
- Combine butter, cilantro, parsley, green onion and poblano or jalapeño in a small bowl; mix to combine. On waxed paper, form mixture into a thick roll, about 1 inch in diameter. Wrap and freeze. Shape ground beef into 6 large balls. Cut frozen butter mixture into six 1/4-inch lengths.
- Preheat grill to medium-high. Make a depression in the center of each meatball. Place a frozen butter slice in each meatball and seal the meat around it. Shape into patties about 1 inch thick, taking care to keep the butter mixture covered with meat. Grill burgers for 6 to 9 minutes on each side, or to desired doneness. Meanwhile, grill onion and pepper slices until tender.
- Place burgers on buns; top with onion and peppers. Drizzle with blue cheese dressing.
