Chicken Cordon Bleu

INGREDIENTS conv. chart U.S. Metric

1 tablespoon(s) butter
4 small (skinless, boneless) chicken breast halves, about 1 1bs.
.5 cup(s) chicken broth
2 tablespoon(s) balsamic vinegar
.125 teaspoon(s) (coarsely ground) black pepper
4 (thin) slices ham, about 2 oz.
4 (slices) thin part-skim mozzarella cheese, about 2 oz.
1 bag(s) (5 oz.) baby spinach

DIRECTIONS

  1. In a large nonstick skillet, melt the butter over medium-high heat. Add chicken and sauté until golden brown on the bottom, about 6 minutes. Turn chicken and reduce heat to medium; cover and cook until chicken loses its pink color throughout, about 6 minutes longer.
  2. Raise heat to medium-high and stir in broth, vinegar and black pepper. Cook, uncovered, 1 minute, then remove skillet from heat.
  3. Top each chicken breast with a ham slice, then a cheese slice. Cover skillet until cheese melts, about 3 minutes.
  4. Divide spinach among 4 plates and top each with a chicken breast. Drizzle the balsamic vinegar pan sauce over the top.
