Ingredients

  • 1.25 cup(s) flour
  • .5 teaspoon(s) baking soda
  • .5 teaspoon(s) salt
  • 1 cup(s) (firmly packed) brown sugar
  • 1.5  stick(s) (3/4 cup unsalted) butter
  • 2 large eggs
  • 1 teaspoon(s) vanilla extract
  • 2.5  cup(s) (old-fashioned ) rolled oats, uncooked
  • 1 cup(s) white chocolate chips
  • .5 cup(s) pistachios, toasted
  • .5 cup(s) (dried) cranberries

Directions

  1. Preheat oven to 350ºF. In a small bowl, combine flour, baking soda and salt; mix well. In a large bowl with electric mixer at medium speed, beat sugar and butter until light and fluffy. Blend in eggs and vanilla. Reduce speed to low and beat in flour mixture until well combined. Using a spoon, stir in oats, chocolate chips, pistachios and dried cranberries.
  2. Drop dough by rounded tablespoonfuls onto a large ungreased cookie sheet, about 2 inches apart. (You may line the cookie sheet with parchment paper.) Bake 12 to 14 minutes, or until edges are golden. Remove cookies to wire rack to cool.
