Katie Lee Joel's Peach Cobbler

The West Virginia native uses ripe summer peaches to make this Southern treat for husband Billy Joel — it’s his absolute favorite!

INGREDIENTS conv. chart U.S. Metric

4 cup(s) (peeled, sliced, fresh) peaches, about 4 to 5 peaches
1 cup(s) sugar
1 cup(s) flour
1 teaspoon(s) baking powder
1 teaspoon(s) kosher salt
.5 cup(s) milk
4 tablespoon(s) (.5 stick unsalted) butter, melted
1 tablespoon(s) cornstarch
.75 cup(s) boiling water

DIRECTIONS

  1. Preheat oven to 325ºF. Place the peaches in a 9-inch square baking pan.
  2. In a medium bowl, mix together ¾ cup of the sugar, the flour, baking powder and ½ tsp. salt. Add the milk and melted butter, and mix well. Pour the batter evenly over peaches.
  3. In a small bowl, mix the remaining ¼ cup sugar, the cornstarch and ½ tsp. salt. Sprinkle over the batter. Evenly pour the boiling water all over. Bake for 50 minutes, or until golden brown and bubbling. Serve in individual dessert dishes.
