Lenita Smith's Tasty Pistachio Whip

Lenita whipped up this yummy dessert in the midst of losing 76 lbs. and skyrocketing her self-confidence!

INGREDIENTS conv. chart U.S. Metric

1 package(s) (6-oz. fat-free, sugar-free) pistachio instant pudding
1 can(s) (crushed) pineapple, in its own juice, undrained
.5 cup(s) (chopped) pistachio nuts or walnuts, toasted for 5 minutes, if desired
1 container(s) (8-oz.) fat-free whipped, topping

DIRECTIONS

  1. In a large bowl, whisk together instant pudding and pineapple.
  2. Stir in chopped nuts, reserving 2 Tbsp. for garnish. Using a rubber spatula, gently fold in whipped topping.
  3. Spoon mixture into dessert glasses; sprinkle tops with reserved nuts. Refrigerate 2 hours before serving.
